The harvested plants can be processed at a Farmer's workshop with a "process plants" task/order, which will produce the growths and seeds. (I just tested this in 52.04, I first noticed it in 52.03 but tasks from order couldn't find specified plants, and now they can.) But Quarry bushes hav long produced plants that required going through the "Process plant to bag" task at the Farmer's workshop, see https://dwarffortresswiki.org/index.php/DF2014:Farmer%27s_workshop , only now they don't also produce extra leaves. Hmm, it does seem to be only creating 1 leaf per plant, though. |

Indeed processing the Quarry Bush plant will produce extra leaves in addition to the rock nuts, so it is still technically possible to have a less productive Quarry Bush farm. This has a more severe effect on other plants as well as modded plants. For example, in the Advanced Agriculture mod, the thread producing plants such as Pig Tails have growths which contain the seeds. So it is impossible to have a plant cloth industry if using that mod. |

OK, so if a general "process plants" task picks up a quarry bush, it'll produce 1 leaf and some rock nuts, but a "Process plant to bag" task will produce a stack of 5 leaves and some rock nuts. So, there is also the issue of quarry bushes being allowed for both tasks. |

As an example of a growth that it is completely unobtainable, unlike Quarry Bush Leaves which can still be found in smaller quantities by processing harvested bushes: Potato Leaves are not harvested from farm plots, and there is no equivalent Processing that can produce them. So it is impossible to farm and dye things with potato leaves unless a caravan sells them. |

I am also experiencing this bug -- I first encountered it when trying to play with Droseran's "Advanced Agriculture" mod which makes extensive use of plant growths, including for Pig Tails as zapking5 noted, and which this bug causes some pretty severe problems for making many of the plants either unusable or difficult without resorting to clunky or tedious workarounds. I think the same is likely true for many vanilla above-ground crops that use plant_growth. To confirm that it's definitely a vanilla issue and not related to the mod, I went ahead and generated a pocket world with a new embark on a vanilla install with no mods to test. Dug out a quick simple fort and some farm plots and planted rock nuts for quarry bushes since those seem to be the only vanilla underground plant with a PLANT_GROWTH (leaves). I let time pass and then made a save just before they were ready to harvest. If you unpause the save you can watch the farmers harvest the quarry bushes without any leaves (growths) obtained in the process, which it used to before this bug was introduced. (Even the wiki page for quarry bushes says simply harvesting them generates some leaves along with the plants, while you could process them to bag at the workshop to obtain even more leaves) I'll post over in the Kitfox Discord in case uploading the save would be useful. |

Quarry bushes are supposed to be harvested whole, then processed into a bag to yield leaves. It's how they've always worked, going back to the first version of DF released over 19 years ago. It's possible that the behavior previously observed in 0.47.05 (where harvesting a quarry bush would yield a stack of plants and a stack of leaves) was a bug which subsequently got fixed. |
