 Muskox and elk corpses are butcherable. Rabbit corpses are not. It seems rabbits are the only non butcherable animals.

 They're too small - an adult rabbit is only size 500, and that's not big enough to yield even a single unit of edible meat. Logically, they probably ought to be treated as vermin (just like squirrels and chipmunks).

 This explains why butchering a rabbit in Fortress Mode doesn't yield anything but a skull. The same thing is true for a cavy.
